Mission
GENERAL MISSION
Restaurant manager 101 with the constant goal of satisfying each customer and developing guests’ loyalty by respecting all financial and quality standards.
TASKS & ACTIVITES
* Reach all financial goals
o Generate profit for the service: revenue, average checks, number of covers, through actions taken on operational marketing;
o Use management and analysis tools provided by Yannick Alléno Group (DRR, weekly report, pickup chart, menu engineering) following YAG standards;
o Manage 101 restaurant budgeted F&B costs;
o Supervise merchandise stocks as well as office supplies based on an optimal turn-over of small restaurant equipment, linen, OS&E and hygiene products;
o Communicate accurately with the executive chef and with the restaurant managers about financial objectives.
* Respect and control the implementation of YAG & One and Only The Palm norms and quality
o Report any damage or concern to your immediate supervisor;
o Be responsible for developing service quality: ensure an appropriate team organization, supervise and enhance quality criteria and standards set by YAG;
o Respect and ensure the application of all hygiene HACCP procedures;
o Formalize and keep updated the guest’s preference file tool or any other tool provided by YAG.
* Ensure an effective Human Resources management
o Inform HR and YAG operations management about team needs in a real-time basis;
o Contribute in the team selection and recruitment process placed under the responsibility of the food and beverage;
o Limit team turn-over through great team cohesion and by encouraging loyalty;
o Supervise schedule management and ensure that rosters are done properly, respecting the number of working hours;
o Set up training courses in order to develop staff members expertise and skills;
o Encourage internal promotions whenever possible;
o Perform a semi-annual / annual evaluation of the restauraznt manager and bar manager;
o Be a true Leader for the food and beverage team;
o Work hand in hand with the executive chef;
o Organize and conduct weekly meetings and participate to daily briefings (before and after services).
* Ensure a rigorous service management
o Oversee daily and coming-up reservations and communicate them in coordination with bar manager, on a daily basis;
o Follow and ensure the organization of teams, supervise and control the service preparations;
o Ensure and guarantee guest’s satisfaction;
o Participate to the service when needed and follow tables progression during the service;
o Have a close and accurate communication with the restaurant manager, bar manager and head sommelier;
o Ensure the proper closing of the cash registers;
o Verify the cleanliness of the restaurants as well as its surroundings and take potential corrective measures;
o Ensure the overall restaurants openings and closures.
* Communicate with all operation’s participants
o Be an ambassador of YAG core values by promoting a positive internal and external image of the establishment;
o Manage potential guests’ complaints;
o Work in perfect harmony with the executive chef as well as with the restaurant team.
Profil
* Creativity;
* 3-5 years experience in an equivalent position;
* Excellent knowledge of food hygiene and safety regulations;
* Good managerial skills : able to inspire, motivate and develop employees;
* Good presentation;
* Fluency in English.
